Here are a few I have tried and enjoyed. Maybe others can add to the list:
Cycle Rickshaw in Bangladesh, this is the main way to travel around Dhaka and is very cheap.
Tuk Tuk in Bangkok. Good for a one off but not all the time and more expensive than a taxi. The problem in Bangkok is the pollution in the air.
Vaporettos in Venice. The water bus service for Venice. Very good value and you can see all the sights from the water.
Star Ferry in Hong Kong. The best way to see the harbour.
Manly Ferry in Sydney. Must be the best ferry ride in the world.
Long Tail Boat in Thailand. The fast boats seen in a James Bond Film that ply the coastal areas and the rivers. Great fun as they move very fast.
Greyhound Bus in the USA: A tough one at times but you see real characters, was shocked at the state of the bus terminal in LA and the condition of the bus used form Las Vegas to LA.
Trams in many cities. Stand out ones are Melbourne, San Francisco and Stockholm.
A taxi ride in Bangkok will give you the ride of your life. It seems that no speed limits apply to the drivers and they are not afraid of flying into a tiny gap between two huge trucks at 160km/h or weaving all over the road to save a few seconds on journey time. Make sure you look for a modern looking taxi as you may be lucky and it will have a seatbelt.
For something a bit more relaxed, a yacht is the best way to see the Greek Islands.

Hot air balloons are a very quiet and peaceful way of exploring many countries.
Campervans are a great way of exploring New Zealand. NZ is mad about campervans and huge numbers of tourists do it every year.
